June 14, 2008 - Another chili cook-off; Thorpe Park, Flagstaff, Arizona.
They start cooking @ 10:00 a.m. - finish @ 1:00 p.m.
They are judged @ 3:00 p.m.
They pay $42 for a membership.
They must supply one gallon of People's Choice Chili
All cooking areas must be covered
All meat must be purchased from a supermarket-type facility or a licensed butcher. No game meat is allowed.
A 3-unit wash station must be set up at each cooking tent
A hand-wash station with catch bucket must be available at each booth.
A food thermometer and fire extinguisher must be present in each booth.
No enamel-ware or dented cans may be used.
All tents must have weights attached to prevent their blowing over due to wind.
One cook in each tent must have a Food Handlers Permit.
Usual first price money for Red Chili is about $525.
Green Chili First Price is around $370.
Salza Price is $100
As you can see, they are a dedicated group; hard work - an 'investment' in time and money, and the prize-money certainly does nothing more than cover their expenses.
Applause for those people is in order, I think!

A QUICK AND TASTY MEAL - EASY RECIPE!
Cook up some angel-hair pasta - chill overnight.
Use: Cooked chicken - breast meat only
Add: 1/2 cup of chopped walnuts
1 cup of thinly-sliced cucumbers
1 cup chopped, fresh tomatoes or halved grape tomatoes
Mix in 1 cup of sour cream - season if you prefer; a little
garlic powder gives it a nice 'zing'.
Mix in the pasta - top with sliced tomatoes and cucumbers.
A great summer dish - uses up left-overs too!
Use: Cooked chicken - breast meat only

Prepare a whole chicken - score down the middle to 'butterfly' the entire chicken.
Brown on both sides.
Add 1 cup of chicken broth
1/4 cup of red-wine vinegar
1/4 cup of chopped, pitted GREEN olives
3/4 cup chopped, pitted prunes (dried plums)
Salt & Pepper to taste
Cover all - on the stove - LOW heat; allow 1 to 2 hours for it to 'simmer', then serve with the olives and prunes over the top.
A nice fresh salad - or vegetable plate finishes it off!

HAVE YOUR EGG CRACKED INTO A SMALL DISH - THE YOLK CAN'T BE BROKEN IN ANY WAY.
AS SOON AS YOU'VE FORMED A WELL IN THE WATER BY THIS VIGOROUS STIRRING, SLIP IN THE EGG.
IMMEDIATELY REMOVE FROM THE HEAT; COVER THE PAN, AND LET IT SIT UNTIL THE WHITE IS SET.
USE A SKIMMER TO REMOVE THE EGG.
BY THE WAY, DEXTER CAN HAVE AN EGG 3 TIMES A WEEK - IF YOU FEED HIM ONE OF THESE, BE SURE IT'S COOLED SO IT DOESN'T BURN HIS TONGUE.
