HI - WE LOVE WHAT DEXTER'S BEEN DOING - HE'S OUR DOG, AND HE'S SPECIAL....


We were reading about the idea of putting a VEGETABLE CHILI RECIPE here - when we think about what that deer asked in his post (below), we figured we could share one that we use.
Cook up about 8 ounces of Basmati Rice
Fry (gently) 1 small finely
chopped onion and 1 large boiled potato that's been chilled (left-overs are good
if you can keep them away from Dexter).
Add: 1 large diced red pepper; 1
large diced green pepper - a nice hand-ful of string-beans and any other
vegetables you might have managed to keep Dexter from gobbling
up
.
Take 2 fresh green chilies - chop them fine (Dexter doesn't like these) - Add to this mixture - then some DRIED chilies of your choice (lots to choose from in the grocery store).
A large can of kidney beans -
about 14 ounces of canned diced tomatoes. Now put in a small jar or can of
tomato PASTE. Stir this all around - mix thoroughly.
Simmer all afternoon - we take
Dexter out for a walk, and then a romp in the park.
When you get home, serve with a
bit of fresh parsley; a bit of sour cream on top - and a dab of butter just for
fun!
Oh yes, we love the music - Dexter has good taste.
